Roasted Vegetables

I just made some roasted vegetables, using carrots, squash (the kind that looks like an overgrown cucumber), onion, a white turnip and the little potatoes. The choices were mostly driven by what needed to be used up. Since my roommate and I are part of a vegetable co-op we’ve been getting a giant box of vegetables each week and struggle to use enough. (And it’s a struggle even though my roommate is a vegan.)

Anyways, the vegetables were seasoned with thyme and italian seasoning (we were out of basil). It turned out just fine, but I kept wondering what better seasonings I might use. In particular I really liked the potatoes and the squash, but the squash was a bit sweet for that type of seasoning and I think something else might have suited the potatoes better. So are there any suggestions from the audience?



  1. Everything goes better with coke.

  2. As much as I’d like to disagree, I suspect Grandpa has a recipe for cooking chicken with coke somehow.
